Summer Quinoa Salad with Lemon Herb Dressing

The Quinoa Salad

Salad Ingredients:

2 cups cold, cooked quinoa

2 cups fresh kale, thinly chopped

2 baby cucumbers, chopped into bite size pieces

6-10 cherry tomatoes, sliced in half

1 red pepper, roasted and chopped

1 yellow pepper, roasted and chopped

2 scallions or green onions, thinly sliced

1/4 cup toasted cashews or toasted sunflower seeds

Salt and pepper to taste 

Directions

  1. Combine all items together in a large bowl.

  2. Toss in your favourite dressing or the lemon herb dressing below.


The Lemon Herb Dressing

Dressing Ingredients

1/2 cup olive oil or your favourite oil

2 clove minced garlic

Juice from 1 large lemon

1 tablespoon maple syrup or honey 

1 cup fresh mint, dill, parsley (just one or a mix of all three)

1/4 cup water 

1 tsp sea salt

Directions

  1. Place garlic, lemon juice, maple syrup, salt, fresh herbs and water into the blender.

  2. Blend until lightly chopped.

  3. Slowly drizzle in the olive oil while blending on medium speed

  4. Adjust salt to taste 

  5. Dress salad.
